Green Apple & Bacon Mac n Cheese
after a long and wonderful labor day weekend spent with incredibly amazing people, returning to work was quite a challenge. nothing solves the monday-, or rather in this case tuesday-blues, than comfort food: my best mac n cheese recipe, yet!
10 slices bacon, baked, chopped
16 oz cellentani pasta
3 tbsp butter
1 shallot, chopped
3/4 c 2% milk
3/4 c half & half
1-2 tbsp flour
8 oz white cheddar cheese, grated
4 oz goat cheese
2 oz asiago cheese
1 granny smith apple, finely chopped
1/4 c bread crumbs
salt/pepper to taste
cook pasta, al dente, about 10-12 minutes. meanwhile, sauté shallot in 1 tablespoon butter, about 7 min. add additional 2 tablespoon butter and flour. slowly add milk and cream over low heat until sauce begins to thicken. add cheeses slowly until incorporated and smooth. toss cooked pasta, cheese sauce with chopped bacon and apples. add mac n cheese to a large, greased baking dish. top with bread crumbs. bake 450 (f) for 10 minutes.
